LEMON ARUGULA SALAD RECIPE WITH PARMESAN CHEESE

We all need a delicious simple salad in our back pocket for those busy nights.

Today’s Lemon Arugula Salad Recipe with Parmesan Cheese is one of those salads for me. It is a simple arugula salad using simple ingredients.

When it comes to a delicious salad I don’t discriminate.

I love so many different kinds from a big Greek Village Salad, to an Easy Lebanese Salad, to a tabbouleh salad, to a fattoush salad.

But sometimes simple is best, and this is one of those times.

I am a lover of arugula. That peppery flavor is just so good.

You can almost always find a bag of it in my fridge for salads, pizzas or wraps.

I love adding a handful to my weeknight dinners like this pizza along with parmesan cheese, prosciutto and olive oil.

I love the crunchy pine nuts and the creamy Parmesan cheese paired with the light lemony dressing and peppery arugula.

One tip when using arugula is to let it come to room temperature before making the salad. This helps it to release more flavor.

This truly is one of the best arugula salad and one you can make in under 10 minutes and pairs perfectly with so many meals.

Forget those boring green salad recipes and try this lemon arugula salad!

FAQs

What to do with arugula before it goes bad? ›

If that arugula, spinach or kale needs to be used up quickly, toss it into the food processor with some good olive oil, oily nuts (like pine nuts or walnuts) and some grated hard cheese. Blend Parmesan, pecorino or even aged Gouda for a pesto that will taste lively over pasta or slicked onto bread as a sandwich spread.

How to make arugula less bitter? ›

Blanch Them

Blanching your greens is key to getting that bitterness level down. Because glucosinolates are water-soluble compounds, a lot of them are leached out into the water, allowing for a less bitter green.

What is the difference between arugula and baby arugula? ›

Arugula and baby arugula come from the same plant but are harvested at different stages of maturity. Baby arugula is picked when the leaves are still small and tender, and baby arugula tends to have a less pronounced peppery bite than mature arugula, which has large, full-size leaves.

Who might need to avoid eating arugula? ›

For those with existing health conditions, particularly those related to blood clotting, it's important to talk to your doctor before making arugula a staple in your diet. Its high Vitamin K content can affect blood thinners like warfarin.

Does arugula cleanse the liver? ›

Leafy greens such as spinach, kale, and arugula are packed with nutrients such as vitamins A, C, and K, folate, and minerals such as iron and calcium. They also contain antioxidants that help protect the liver from damage and support the liver's detoxification processes.

How long will arugula last in the refrigerator? ›

With proper storage, fresh arugula will keep for 3-4 days but should be consumed ASAP! It can also be preserved by standing up in a glass of water in the fridge, and wrapping a plastic baggie loosely around the “bouquet” to reduce moisture loss from the cold fridge air.

Why does arugula spoil so quickly? ›

Faster than any other leafy green. One reason arugula wilts is transpiration. Arugula, like all plants, absorbs nutrients and water from the soil. As that nutrient-rich water moves through the plant, it nourishes cells and helps vacuoles stay nice and full.

Arugula is very hardy and can withstand frost. This specific variety is hardy down to 6˚ F. Arugula prefers rich, moist soil and cooler temperatures but can withstand a variety of different climates. Hot weather causes quick bolting, so it's best to plant in fall or early spring in warmer climates.

Why is arugula so bitter to me? ›

Arugula can have a bitter taste because of the presence of a chemical within the plant believed to shield plants from pests and bugs. The bitterness depends on the type of arugula.

Is arugula better for you than spinach? ›

The calorie, protein, and fiber content of both vegetables is similar, but the vitamins and minerals tip the scale towards spinach — except for calcium. Spinach has more vitamin A, C, K, folate, potassium, magnesium, manganese, and iron.
